Cucumber and Lemongrass Fizz

A fantastic drink to enjoy this summer. Really refreshing!


Ingredients

1 cup still water

20 slices of cucumber

2 sticks of lemongrass

5-6 cups of sparkling water (I use my fabulous SodaStream for this)

Lemongrass/cucumber and ice to serve


How to make:

1) Using a rolling pin or something similar, bash the lemongrass on a board to break it up which releases the flavour then place it into a jug with the 1 cup of water. You may need to chop it into a few pieces so it is completely submerged in the water.

2) Add the cucumber slices to the water and lemongrass and leave in the fridge for an hour or two so the flavours infuse into the water.

3) Remove the lemongrass from the chilled water and place the flavoured water with the cucumber slices...

Almond Pistachio Oat Cookies

Are you looking for a healthy snack??!! Look no further because you’ve found them right here!! These cookies are the perfect snack to satisfy all those hungry feelings!! Almond pistachio oat cookies, half double dipped in raw chocolate and a sprinkle of pistachios. YUMMY!!! These are so handy to keep in your bag, your car, your desk drawer… hide them in your closet because if others find out about them, they will disappear very quickly  

Ingredients:

Makes 20 Cookies

Almond Pistachio Oat Cookies

1 cup oats

cup desiccated coconut

cup almond meal

cup pistachios

2 tbsp coconut oil

3 tbsp maple syrup

2 tbsp coconut sugar

tsp vanilla bean paste

1 tbsp water

2 tbsp nut butter of choice (almond, peanut, cashew)

Veggie Patties

(These patties can be prepared in advance and frozen)

2 sweet potatoes (chopped)
cup grated carrot 
cup grated beetroot

cup grated zucchini
cup finely chopped broccoli

A handful of chopped continental parsley and basil
Salt and pepper
1 egg

Preheat oven to 180C
Heat a large pot of water over high heat and bring to the boil. Steam chopped sweet potato and cook until soft.
Add to a large bowl: steamed sweet potato, grated carrot, grated beetroot, cup grated zucchini, finely chopped broccoli, continental parsley and basil, salt & pepper
Add egg and mix until combined
Roll combined mixture into approximately 15 palm-sized patties and flatten slightly
Fry or bake patties before serving

Bircher Muesli

2/3 cup oats

1 cup almond milk (or milk of choice)

1/3 cup apple juice (no added sugar)

Dash of cinnamon

Dash of vanilla essence


Prepare the bircher the night before by simply adding these ingredients to a bowl: oats, milk, apple juice, dash of cinnamon and a dash of vanilla essence.

Leave covered, in fridge overnight to enjoy the next morning

Top with fruit of choice and honey

Add coconut and top with cinnamon and honey

What is Wellness Coaching?

If we define wellness as the balance of body, mind and spirit, living successfully and ageing gracefully, then wellness coaching is the process by which we gain all of that. We are obviously very familiar with the use of coaching in sport but the role of a wellness coach differs in that there are more subtle methods used that don’t involve ranting and raving, or even giving ‘advice’. Rather a wellness coach will support, encourage and facilitate change in the direction you would like to move. It is often about the introduction of healthy behaviours and includes small steps towards implementing healthy behaviours into a lifestyle often already crammed full of ‘other stuff’.
